Field dressing is bloody, messy business

Good advice from your dad. I carve up my own steaks from rib roasts etc. and keeping the one hand clean helps to not cross contaminate the meat or anything else I may have to touch while doing so. I even do the same while seasoning before cooking. 
   I agree field dressing is a different beast. Trying to dress out furred or feathered game and not getting external contaminates on the meat can be a real challenge especially in windy or wet weather. Flies, mosquitos and everything else nature can throw at you can make it difficult.
